...sell by date? I purchased a very large pack of 18-month air dried parma ham which has a use by date of the 6th January 2008.The pack is vacuum-sealed, and I've been keeping it in the refridgerator, so I was wondering how long will it be safe to consume?I fail to see how something can be dried for 18 months, vacuum packed and then have a definite use-by date.If any chefs out there can give me some guidelines, it would be appreciated.
